Wet the meat and place fatty side up in (heavy duty) foil. Sprinkle both sides with onion soup mix. Fold foil loosely around roast leaving room for steam to circulate and moisture to gather.
Place on cookie sheet and bake at 300° for 3-4 hours.
Optional: Add carrots and/or potatoes for the last 1½ hours of cook time.
