Warm water to 105° to 115°. Disolve yeast in water. Make sure you don't mix yeast water with HOT milk. You will kill the yeast.
* Scald Milk - 3 minutes in microwave on high
** Melt butter - about 2 minutes in microwave.
Use a 4 cup measuring cup to combine milk, butter, sugar, salt and eggs. Temperature of mixture should be 120° - 130°.
Add milk mixture to yeast. Then add slightly less than ½ of flour. Beat until smooth (180 strokes) while adding remaining flour. Knead 7-10 minutes.
Place in greased bowl. Cover and let rise until doubled in size (about 1-1½ hours).
Heat oven to 200° for 2 minutes, then turn off. Put pan of hot water in bottom. Let dough rise in the warm oven.
Punch down dough. Roll ½ into a circle ¼" thick. Cut into 16 pie wedges. Brush with melted butter, then roll up.
Place rolls on greased cookie sheet, let rise ¾ hour. Brush with melted butter. Sprinkle with poppyseed.
Remove pan of water for oven and place rolls in oven to finish rising. Make sure oven is off, but warm.
Bake at 375° 12-15 minutes.
To refrigerate: Cover after made into rolls, before rising, and refrigerate.
To continue baking: Remove from fridge and let stand 1 hour before letting them rise for 45 minutes.
