Place eggs in pan. Cover with 1 inch of water. Cover pan and bring to a boil for 2 minutes. Turn off heat and let pan sit for 12 minutes. Remove from stove and immediately immerse in iced water for 45 minutes before refrigerating.
Makes hard boiled eggs that are easy to peel (under running water) with yellow yolks but no brown, grey or green coating.
