Chicken Soup from Carcass
  • 1 Chicken/Turkey Carcass
  • ½ Onion
  • 1 Tbsp Oil
  • 1 Tsp Salt
  • 1 Tsp Pepper
  • 5 Cups fresh vegies, 1" pieces
  • 2 Potatos, 2 carrots, celery tops
  • Turnips, parsnips, green beans
  • 1 Bay leaf
  • ¼ - ½ Cup Onion or Green Ppper
  • Leftover Gravy & Water to cover

Place carcass broken into smaller pieces into a large stewpot and bring to boil. Add salt, pepper, chunks of onion (¼ onion) and a sliced carrot.

Allow to simmer until meat falls off of the bone. Remove onion chunks and bones. Carrots may stay in the broth.

Optional

Saute veggies before adding to the pot

Add veggies, any leftover gravy, a bay leaf and allow to simmer.
